I used to store coffee beans in the freezer. I was then told by one who purports to be an expert that freezing the roasted beans is bad and that they should be stored in an airtight container in the fridge.
i have read a few screeds against freezing coffee beans and none have convinced me; the usual claim is that you'll get condensation when the frozen beans are exposed to air; i live in a semi-desert, and i only open the bags briefly to get out a weeks worth of beans, then i let those beans warm up before grinding them; i never see any hoarfrost on the beans that have been frozen, so i think i'm keeping them quite free of condensation, and i can't tell the difference between the first cup from these beans and the last cup, a few frozen weeks later
