I prefer two cards over one.
Then you have some redundancy should one card fail.

I partly agree with DagT about placing your bet on 512 Mb cards, for price's
sake. That way you can buy two cards now and expand as finances allow, if you
like.

Anyway, I'd say go for a pair of cards of the largest capacity you are
comfortable with paying for. Not having to swap so often is a great convenience.
Especially for outdoor shooting or that week-end in the countryside.

Just for the record; a 512 Mb card holds about 35 RAW files, and a 1 Gb card
about 70 files.
