What you'll need, is some kind of an audio editing software.
There are many of them out there to choose from!
You could use Wave Pad which is free to get your foot in the door.
Or, you could use total Recorder which cost around $45 or so.
There is also Gold Wave, I don't know how much this one will cost, but
you can check it out at:

There is also Sound Forage which is made by SONY.

One more that I could suggest to you is, Studio Recorder.
It is made by American Printing House.
It cost around $200.

This is the only one that I know of that was made with blind people in
mind.
All the other ones will work with screen readers too.
Well, that pretty much takes care of the software, now lets get in to the
hardware.
For starters, you'll need a turn table and a phono preamp.
Most people use their stereo receivers to accomplish this task.
But if you want strictly plug and play, there are quite a few USB turn
tables out there that you can use.
Some of them costing no more then $30.00!
One place you can look for one of these is, AMERICAN MUSICAL.

The USB turn tables comes with ordasity, it comes on a CD rom.
But if you're going for high quality sound, then the turn table preamp
combo is the way to go.
Here is what you'll need in order to hook it all up.
Most sound cards only have 1 8th inch jacks on them.
An RCA to 1 8th inch adapter cable is needed to hook your preamp and or
stereo receiver up to your sound card.
You can get them from RadioShack.
They will cost you any where between $6 to $9.
