Okay, I'll do my best to explain things here.
Given that Audio Hijack Pro handles many sources then how you adjust the
level depends very much on what you're hijacking/recording from, with
Audio Hijack Pro, "Hijack" and "Record" are 2 different operations. In
order to "Record" you first need to "Hijack" a source, you may just want
to "Hijack" a source rather than record it, when a source is Hijacked, you
can redirect its audio for example.
Some sources you can adjust the level by adjusting the volume control of
that source - say DVD Player -, others are "Fixed" level sources but the
point here is that Audio Hijack Pro is not an editor, only a recorder so
if further level adjustments or tweaking is necessary then you "Edit" the
recording which is placed in Audio Hijack's "Recording Bin", various other
operations are available from there including the addition of effects,
burning to CD and so on.
I hope this goes some way to explaining things and other Mac users may
have additional notes to add.

Well I don't know who to give credit to for this but it seems that -f
you're prepared to fiddle a bit - the Effects in Audio Hijack Pro are
accessible.
For example, select the "Effects" tab and navigate to the Scroll area,
Interact with this.
Move the mouse to the scroll area with vo-command-f5 and click, a menu
listing all the effects pops up, choose the one you want and press the
return key.
Now to clear the effect? Go into the "Control" menu of Audio Hijack
pro and select "Clear Effects".
Yes, some problems still need to be addressed, you can't as far as I
can tell adjust the effect or have more than one effect active at the
same time - well at least you can't use Voiceover to accomplish these
tasks - but perhaps if we keep gnawing away - as we have ben - at the
developers then we'll continue to see improvements to what is an
excellent product, Audio Hijack Pro is one of those products on the
Mac that I myself couldn't do without as it can be put to so many
uses, everything from Recording Skype and Ichat sessions to amplefying
sound taken from the line-in of the Mac.
