my answers :

1. no , it 's not possible to delete tracks directly from a ipod, you need to use itunes or an alternative software such as copy trans manager i mensionned on another message to do this.
same for podcasts
which, in my view, is very frustrating because you have to remember which podcast you have listened to delete old epizodes from itunes afterward.

2. you can copy videos to your ipod, it only support m4V format, with a specific resolution, but I think Itunes can convert video file to the right format for that matter.
otherwize, there are 3rd party convertion tools.

your last question, the ipod do not have a camera, it's a player, so it's not possible to record videos or photos on it, you can still watch videos & photos.
