And, the only way to do it is to change the phase of one of the two channels to 180 degrees out of phase with the other channel.

The way that vocal reduction works is to eliminate the center channel. Thus, if the vocals are dead centered on the stereo spectrum, *and* if all the other instrumentation is not dead centered, *and* if there is absolutely no stereo bleed-through in the vocals or any kind of a stereo reverb, then the vocals can be eliminated to the point of being pretty much imperceptible. Doing so will take away any of the instrumentation that was dead centered as well.
