Hi Dan, In my experience with EAC, I don't think you can get it to automatically put them in to a artist's directory. Also if you want to see the files in the order they are on the disc, I think if you open the directory first then go back to EAC and save them they will be in the directory in the order which EAC saves them. The next time you open that directory they may or may not be in that order unless you set the parameters of how you want them by going in to the directory and setting the details to how you want them to be displayed.
