If we're talking very advanced compact Flash recorders, the Ederil R1, 
which you can buy at ChirpingBat is very good.

The already mentioned Sony ICD-MX20 and a couple of Olympus recorders,
like the DS-2. These recorders cannot speak their menus, but one can set
these menus via the PC.
