Mike, A few years ago Jonathan Mosen did a four cassette tutorial on Sound
Forge which is excellent.  Also Brian Hartgen has one as well.
You can find both of these by going to 
the freedom scientific web page and click on the tutorials link and 
to
www.hartgen.org.uk

for brians.
Brian's cost around $40 and Jonathan's around 80 dollars from freedom
scientific.
