This is currently working fine:

  sed -i '/pyinstaller/d' pyproject.toml

It removes six lines from pyproject.toml, which currently neatly removes all
mention of pyinstaller and works fine. It may, however, be a bit sensitive to
future reformatting of pyproject.toml. If you would like to be more precise
about removing the dependency on pyinstaller without touching anything else,
you might consider adding a BuildRequires on tomcli and writing something like

  tomcli set pyproject.toml lists delitem dependency-groups.test \
      'pyinstaller\b.*'

Consider passing the -rs option to %pytest to ask it to print the reasons for
skipped tests. This will inform you that a few more tests could be enabled by
adding BuildRequires on packages like msgspec. You might or might not choose to
add these BuildRequires, but at least it’s a conscious and informed decision.
