I didn't got any feedback to my questions but after searching in
SysConfig I found it and share it here if somebody needs this too.
Shown Tickets per page can be changed in
Frontend::Agent::TicketOverview, where you find definitions for the 3
different views (small, Medium and Preview) and a field called
"PageShown". I see this to 99 and now get to see 99 tickets instead of
the standard 15 per page.
To see the email headers, this is now also an option, which can be
found at Ticket::Frontend::PlainView: . Standard is no, just set it to
yes and there will be a link in ticket Zoom to see the full header of
the email.

Raw Source: There used to be a button to see the raw source of a
ticket. Most spam emails are html with a picture, but I need to see
the raw source so I get to see who send the spam.
