On the ExLibris listserve, I spotted an announcement of an online draft
and demo examples of the Artists Books Thesaurus (produced by members of
the Art Libraries Society of North America, ARLIS/NA, Special Interest
Group). The idea is to have a standardized list of terms for indexing
artists' books.

For Fold-out books, there are illustrated examples of French door books and
gatefold books. Take a look also at concertina bindings and pop-up books.

A search for origami found nothing, but it's only a draft so far!  I'd bet
they'd welcome examples of artists' books where origami is an important
part of the inspiration/structure and suggestions for appropriate
terminology:
