I guess so (the startup scripts may need some mangling too as they'll be 
expecting a jffs filesystem there by default IIRC), but if you don't use 
jffs and you don't have other external storage then you'll end up with a 
purely readonly filesystem - you'd need to make sure everything is 
preconfigured exactly right in the image (dropbear keys, network config, 
etc)
