Can anyone point me to a decent resource to start mucking about with
serial headers on an unknown motherboard? I have before me what looks
like a typical embedded board with a custom-branded processor I
suspect is running Linux. It has a 14-pin header (#3 missing) that
seems right, but since I'm a total n00b in terms of hardware hacking
I'm not certain where to start.

FWIW, this device looks to be a fantastic OpenWRT candidate - 256M
flash, 512M RAM, what seems to be an XScale processor, and ubiquitous
as hell. I'm really surprised that no one has posted any technical
details about it; for that matter, it raises the paranoia hairs on my
neck to the point that I'm (as of yet) unwilling to publicly identify
it.
