The routing table on your VPN clients and server decides where and how
the traffic will flow. That is entirely up to you how you want the
flow. That said, the traffic will always exit at the NIC which has a an
exit route.
Will OpenVPN server accept 10.10.128.2 as an interface to
10.10.128.0/22? How should it be configured? (Or it will only
automatically set 10.10.128.1 as an interface?)
When starting OpenVPN, it will use its own tun interface, with its own
network range. And routing takes care of the rest.
Is there any example of such a setup published somewhere? (I have not
been able to find one.)

These should generally provide some of the basics needed for your setup.
(We would also want to enable IPv6 on all functions, but this matter
will be treated later.)
IPv6 is handled in the same as IPv4, you just need to use the -ipv6
related options in addition. See the man page for details.
