If you want to use the Rados Block Devices (RBD) as block storage for your instances on Nova you have to use Cinder, the OpenStack Block Storage.
2. Should we install a few nodes for Ceph?
For a simple proof of concept it's should be sufficient to simulate a storgae cluster on a single node.
