Found what I was doing wrong.
I was misreading the howto. 
When I did ../misc/CA.pl -newca
I entered org at the first prompt (DUH!)

Well CA.pl -newca isn't setting up the directory structure properly for
some reason. Try deleting demoCA again and redo CA.pl -newca and see
what it does. It should prompt you for a passphrase and the fields which
will appear in the CA certificate.
