OK.

I loaded up the stunnel, self-signed certificate (stunnel.pem & .p12) 
into the Windows certificate store and used that with Wincrypt to sign a 
copy of the PEM file (stunnel.pem.sgn). WinCrypt seems to zip the 
file(s) and then add a signature.

(I've tried to keep it small)
