To many questions... Authentication - nothing. I struggled to find any information of how NFS access control works. For some reason the NFS shares are accessible from the Macs but not from the Windows PC. I very much suspect its something to do with permissions on the file.
I have no LDAP, AD or anything. For SMB I would usually have to set up user and passwords and grant access to shares, printers etc.. For NFS I could not figure out how to one does the same thing but as I mentioned above it seems to be accessible from the Macs. I doubt it is secure seeing that I have not actually configured any specific user access which is not ideal.
