Create a shortcut with this as the target:
C:\Windows\System32\runas.exe /savecreds /user:domain\adminuser "cmd /c
start C:\Windows\System32\Servermanager.exe"

That will run servermanager as your admin account.  Then launch anything
else you need from the tools menu in server manager, so that they are also
run under the same account.
