Here's a start: What's in your path? Typing set in the terminal window should tell you.
Second, did you add source ~/path/to/context/tex/setuptex ~/path/to/context/tex to your ~/.profile You need to have the source work from when you log in, and that happens in the .profile, not the .bashrc. That way, stuff under Aqua see the right environment. If you just do cmdline, then .bashrc is OK. That's similar to GNOME under Linux/BSD. See what happens after you do that.
