Hi Scott,

I see you are using coreos and docker. This is not an officially supported 
configuration for CouchDB at this time. My guess is that you are running into 
performance limitations inherent in this configuration. Can you test the same 
setup, but without using Docker or coreos?

I can guarantee you that many of us have CouchDB in production with loads far 
greater than you are testing with and see no problems of this sort.
