I actually didn't have any "proxy_cache" or "proxy_cache_path" defined in my nginx.conf file but I did remove /var/lib/nginx/proxy/ directory and re-create as you requested and yes now I'm not getting any permission-denied error or any error in the error.log file when I access the url.
