I know the PVR-250 has been around much longer, and is well supported, and from reading the list, the support for the PVR-500 is still at a pretty alpha stage. On the other hand the cheapest I've found the PVR-250 in stock is $148 US, I've found the PVR-500 for $140.
The differences between the -250 and -250MCE is that the MCE does not come with a remote and has RCA connectors directly on the back of the card (rather than the adaptor dongles the -250 comes with). The ivtv drivers I'm using IDed it as a generic -250. I don't remember what drivers I'm using; the first batch I tried worked fine.
