I am a newbie as well, and I have had very nice results using Debian. The
big advantage in Debian is because there is a tool to manage the packages
(apt-get) so there is not pain installing the web server, the MySQL server
and PHP. In other distributions there are nice package management tools, but
I prefer apt. Additionally you could use Debian based distributions like
Ubuntu server which is easy to install and has the advantages of Debian.

The only thing you have to concern is in the security set-up of the server,
but there is a lot of documents in Internet about this issue. If you use
Windows, you would be very concerned about the security as well.

My test server is a Pentium I, with 192 in RAM and 6GB in de HD, where I
have apache, mysql, php, a backup server, a mail server, and the server runs
beautiful. Once I have installed the server (six months ago) I have never
have had a crash or a misconfiguration.

Anyway, the best choice is the one you feel more confortable with, but it
doesn't hurts to try Linux.

Additionally, once a PHP/MySQL is a multiplatform application, you could use
the linux box to develop your application and have the webserver, MySQL and
PHP installed in your laptop to your demo, and to check that your
application is really multiplatform.
