If you want to store your mail on your own machine, you can use
either. If you want to leave your mail on Google's servers (which is
what I do), then you'll want to use IMAP.
If you want to send mail via the GMail STMP server, the SMTP feature
in mutt works fine -- that way you don't have to set up an MTA (qmail,
sendmail, postfix, etc.) on your machine.
