I believe in this case Outlook uses S/MIME multipart/signed, so the signature is in a separate body part and clients without S/MIME support can still read the text/plain part of the message. The other way Outlook can send signed messages (with "clear text" disabled) involves wrapping the signature *and* text into some sort of PKCS binary blob, which obviously causes a lot of trouble with other clients. -Dave Dodge
