In the contrib folder of the abook source tarball there is mail2abook.py

Save it somewhere and add the following to your muttrc:

macro index,pager a "<pipe-message>~/path/to/mail2abook.py<return>"

This script scans the whole message and lists all email addresses which you can 
select to add to abook.
