Have you noted the "?:Help" message in the top right-hand corner of your
screen?  Hitting "?" and then searching for untag by typing "/untag"
brings me to this line:

^T          untag-pattern          untag messages matching a pattern

Now c'mon...  That didn't even require opening the manual!
