Let me count the ways ...
1. Press e to edit the message and save the message as a text file (in
vim - esc :w foo.txt)
2. Press v to view the attachments list and press s to save the
attachment.
3. [simplest] Press s to save the message to a mailbox - and say that
the mailbox is ~/foo.txt instead of ~/mail/foo ;)
