I can't see any reason why this wouldn't work. Have you actually tried
it, or are you just wondering? I have save hooks that put things in
subfolders myself. Folders with spaces just mean you have to quote
them.
I don't think this is an IMAP issue, so you'd probably have better
luck in the general mutt user's list. I'll cc: this there...
