No, you can't create custom prompts, or can't create custom variables
(or even read the values of existing variables).

Yes, probably.

You might consider just sorting the emails into different folders,
and using the "magical" key combination of "c=folder". :-)  I know
it's not quite what you're used to, staying in one incoming folder
all the time and "importing" messages, but a lot of people read
their mail that way and find it quite easy to do. :-)  Mutt really
has very good support for multiple incoming mail folders.  You might
try it, it's quite easy to get used to and maybe not that different
from what you're down now, after all...
