I think uudeview is probably indeed your best bet.  For me, it took ages
to find even *one* unix program that decodes BinHex, and uudeview was
it.

As for setting up a mailcap entry, I think you may be able to do
something like this:

application/mac-binhex40; uudeview %s

But that will only save the content(s) to a file when invoked, you can't
make it automatically handle the content based on the extension (eg. to
show an image if it's a .jpg).

You might want to experiment...

It's probably the default setting for that mailer, or at least that
installation of the mailer.
