Like it was pointed out to you already (I think), you can add the
-f address to the sendmail invocation command by setting the $sendmail
variable. You can also alternatively apply the patch which lets you
configure the envelope sender as a Mutt variable, it was just recently
posted so someone probably has a copy (I don't, sorry). It will also
probably appear in the next Mutt version.
Mutt will likely never talk to a remote SMTP server, that's not its job.
(This has been discussed to death already, probably several times over.)
But if you don't like sendmail and only need emails to be delivered to a
"smart host", set up something like sSMTP (link on the Mutt web page)
which is dead simple to do.
