Minor problems in doc/manual.xml.head

Hi,

In doc/manual.xml.head:

<para>
because it simulates that ESC+V was pressed (which is the default
binding of <literal>&lt;collapse-all&gt;</literal>.
</para>

The closing parenthesis is missing.

Also, the manual should be made consistent concerning the spelling
(behavior vs behaviour).
