There is a nice manpage for lavrec, and a howto (mjpeg.sf.net) that
describes in deep what you have to do to be able to record from a
generic v4l device. 

The command should look like that:
> lavrec -f a -i p -g 352x288 --software-encoding test.avi

But take care that you choose the correct input, because they work on a
bttv card a littel bit different than the do on a zoarn card. You record
from the 1st input of the BTTV card !!! and that does NOT mean that it
is compostite PAL, can also be the tuner input. Depends on how the
cardlayout. 

BTW: Have you tried streamer yet ?
