In Unix you usally use that guide: http://www.mir.com/DMG/stills.html
And there you have all the tools you need in the mjpeg package.
(mjpeg.sf.net)

To convert images to differnet formart use convert from ImageMagic
Package (http://www.imagemagick.org/).
