amazing how annoying two words can be.By saying "make that", you are saying someone else was wrong, and this is correct.
For many purposes, "sudo su -" and "sudo -s" are similar, but they are not identical, and sometimes it matters. And I do believe Chris's process is more appropriate for what he was trying to show.
