Not sure if I want to boot over USB all the time on a production system... does the emmc wear out too quickly? Or is your argument only about disk space?

A good quality USB-3 storage device should work just fine.
Hrm, considering that I'd want a "permanently attached USB drive" to be somewhat small, these "micro USB drives" [1, 2] are quite tempting, though the last one was busy overheating and throttling its throughput. As I see it, most USB sticks nowadays are marketed with water- and x-ray-resistance [2] instead of flash endurance anyway.
