Thunderbird auto connects to the server and lists what is available. First job is to get authentication working. Either BSD files, Dovecot, SQL, LDAP,.... you chose how to run your server. Second job is encryption. Unless you actually need some feature of Postfix, now there's OpenSMTPD, and more people here to help you. And there's a mailing list for it too.
