Update - using just the -k flag *does* work for me, despite my earlier test. I was fooled into thinking it had made no difference because I couldn't force already-queued mail to be delivered - turns out the queue includes the .forward file contents from the time the mail was queued. D'oh.

But queuing a fresh message results in delivery. Wahay! And it's clear that clearing the environment was a change in dovecot between my two versions, so I can see why it works, which is a bonus ;).
