I can't comment on macppc, but mac68k went away because the hardware is obnoxious to support (e.g., interrupt priorities are backwards) and because it was the only shared object architecture based on a.out, which is a real maintenance hassle when we're trying to improve how shared objects work using ELF-specific functionality.
