I opened a ticket with Mikrotik to try to get some guidance as to "what 
is too hot" in terms of what the sensor reads, and I'm finding it 
interesting that they essentially have no idea.

They say "tested up to" 60, 65, or 70c on various models, but it 
specifies ambient. So far, they can't say what readings on the sensors 
would be considered "dangerous" or "critical".

I'm just looking to set an alarm threshold on the sensor SNMP data to 
know "I need to deal with this" if things are too hot.
