If you configured your Windows clients manually for IP addresses, etc,
and then enabled them with DHCP, why would you think that the Windows
clients would still listen to their manual configuration for their
default GW?

Hmmm.. I've never seen this but it -is- Windows.

No. You are using DHCP which has nothing to do with IP Masq. Though
DHCP isn't difficult to setup, if it is misconfigured, it can make your
life hell.
But.. I think it might be worth while to tell users to test with STATIC
IP addresses first.
