For maximal simplicity and robustness use the same encoding of domain
names (U-labels or A-labels) in "d=" and "i=" as you do (or would, if
there was "alignment") in "From:".

If the message already contains some U-labels in From, To, Cc, Reply-To,
Resent-*, ... then there's no reason to try to avoid U-labels, the
message is an SMTPUTF8 message, and so you're free to use Unicode also
in d=, and s= (though it seems a bad idea to use non-ASCII DKIM
selectors, don't do that).
