Select the "All Messages" mailbox
Edit -> Find -> Mailbox Search
(you can also select/change mailbox after entering Mailbox Search, very
convenient)
I have a keybinding set up to the "s" key for this. It's the way I
always search.
"s" = ( "goToMailbox:", "ALL_MESSAGES", "mailboxSearch:" );
You can select the condition options you want and then select
Edit -> Find -> Use as Default Search
