If you get info (command-I) on a video file there is a section called
"Open With" and under that is a popup where you can pick which player
you want to open that file. You can pick VLC and you're all set but
after that popup you'll also find a button that says Change All. If you
action that, all files of the type you got info on should then be opened
with VLC.
