If you interact with the text in the preview and then copy, this should work 
fine.

Getting rid of the preview pane in Mail is very tricky. you first have to 
switch to classic view in Mail Preferences. You’ll be able to find a horizontal 
splitter between the message list and the pane. For the next step, it’s best to 
be in full-screen mode. You’re going to use your preferred mouse-movement 
method and move the horizontal bar as far down as it will go. It will then turn 
into a vertical bar, and you can switch back to standard view. Note that you 
won’t be able to use the vO-mouse methods for this. You’ll have to either turn 
on mouse keys, which is independent of vO, or use the trackpad if you have one.
