Yes, bluetooth keyboards will work just fine. It has Notes, which is good for 
basic note taking and syncs (through iCloud) with any other iOS or OS10 device 
tied to your account. You can buy Pages if you need serious text editing, or 
any of hundreds of editors out there. You can just plug the iPad into the Mac 
and import the photos using iPhoto, but you really should consider using 
iCloud. It will sync contacts, calendars, reminders, notes, Safari reading 
lists and open tabs, and more (especially once iOS7 and OS10.9 come out). It is 
a very convenient way to keep things up to date - add an appointment on the 
Mac, and your iPad or iPhone will remind you of it, for instance, or take notes 
on the iPad, and then open the notes on the Mac for exporting or further 
editing. That said, each person has an iCloud, so if it were me, I'd set your 
wife up with her own account, then make a new user account on the Mac and tie 
her Apple ID to that one. That way, if she wants to use the Mac for 
iPad-related things, she can just log into her account and you never have to 
worry about having both of your content mixing with each other.
