To center the beam and make sure you aren't still moving it (by having your 
finger off to one side) use the home button as a reference. On units with the 
Lightning connector, you can use that - the 30-pin connector would, I think, be 
too large to use for reference, but the smaller one is centered on the device 
so you can feel that and then align your index finger with it to help keep you 
on track.

As to collecting quantum cells, I've discovered something. I randomly turn on 
the beam and move my finger a bit to the right or left, and almost always get 
one, sometimes several, in about five seconds. I think they are always floating 
around, but sometimes there are more than others. It does not seem to use up 
QCs to do this; I believe what uses them is pushing or pulling with the beam, 
not just moving it around to intercept cells. So I just randomly move the beam 
every so often, and have ammassed nearly twenty thousand cells by doing that. 
I've also completed one dimension and am nearly done with a second. Hopefully I 
can get all five done relatively soon so I can see what comes next.
